Pineapple Salsa

Ingredients

  • 400 g fresh pineapple peeled, cored and finely chopped
  • ½ red pepper deseeded and finely chopped
  • ½ chilli deseeded and finely chopped
  • 4 radish finely chopped
  • 8 cm piece of cucumber finely chopped
  • 3 spring onions finely sliced
  • 4 cherry tomatoes finely chopped
  • 1 handful fresh mint stalks removed and finely chopped
  • 1 handful fresh coriander stalks removed and finely chopped
  • salt and pepper to taste

Instructions

  1. Add all of the salsa ingredients to a large mixing bowl.

  2. Mix together and season with salt and pepper to taste.

  3. It's that easy!
