Fried Rice Chinese-Style Fakeaway

Ingredients

  • 2 bags boil in the bag basmati rice
  • 1 large brown onion finely chopped
  • 120 g mushrooms finely chopped
  • a bunch tenderstem broccoli finely chopped
  • 8 sticks baby corn finely chopped
  • 1 clove garlic peeled and minced
  • 120 g frozen peas
  • 2 tbsp dark soy sauce
  • 1 tsp rice vinegar
  • 1 tsp Worcestershire Sauce
  • 2 beaten eggs
  • low calorie cooking spray

Instructions

  1. Cook the rice according to packet instructions and allow to cool

  2. Meanwhile, spray a large frying pan with low calorie cooking spray and cook the onion, mushrooms, garlic, broccoli and baby corn for 5 minutes.

  3. Add the cooked rice, peas, Worcestershire Sauce, dark soy sauce and rice vinegar

  4. Pour the eggs over the mixture and cook over a low heat stirring occasionally for 5 minutes or until the egg has set. Serve with Mayflower Curry sauce and some protein!
