Prick potatoes and place them into the microwave on high for 10 minutes.
Carefully cut the potatoes in half - they will be very hot. Gently scoop out the fluffy middle into a bowl. Place the skins aside onto an oven tray.
In the bowl mix in the cottage cheese, salt and pepper and mash well. Place back into the skins and spray the top of them with the low calorie cooking spray
