Cut the stalks from the ends of the courgettes. Using a vegetable peeler, cut thin slices along the length of each courgette to make courgette 'ribbons' and place in a mixing bowl.
Add the tomatoes, feta, parsley, lemon juice, a few sprays of light olive oil spray and season with salt and pepper.
Toss the salad gently and place in a serving bowl. Serve immediately.
