Courgette Ribbon, Lemon and Feta Salad

  • 3 large courgettes
  • 200 g cherry tomatoes quartered
  • 90 g reduced fat feta cheese crumbled
  • 5 g flat leaf parsley chopped
  • 2 tbsp fresh lemon juice
  • light olive oil spray
  • salt and pepper to taste


  1. Cut the stalks from the ends of the courgettes. Using a vegetable peeler, cut thin slices along the length of each courgette to make courgette 'ribbons' and place in a mixing bowl.

  2. Add the tomatoes, feta, parsley, lemon juice, a few sprays of light olive oil spray and season with salt and pepper.

  3. Toss the salad gently and place in a serving bowl. Serve immediately.
