Apple Pie Cookies

  • 90 g wholemeal flour or plain flour
  • 50 g rolled oats
  • 20 g low fat spread
  • 80 g brown granulated sweetener
  • 1 medium egg beaten
  • 1 red apple unpeeled and finely diced
  • ½ tsp cinnamon
  • ½ tsp vanilla extract
  • ½ tsp salt
  • ½ tsp bicarbonate of soda


  1. Pre-heat the oven to 180ºC and line a baking tray with greaseproof paper.

  2. In a mixing bowl add the egg, low fat spread, cinnamon, sweetener and beat together with a wooden spoon.

  3. Add the oats, flour, bicarbonate of soda, salt and vanilla and stir well until combined. Add in the diced apple and stir.

  4. Using two metal spoons, drop the cookie mixture into 15 equal round scoops onto the baking tray.

  5. Shape them using a metal spoon or fork by pressing on the tops to flatten and shaping the edges into rounds.

  6. Bake in the oven for 10 minutes until golden brown in colour and allow to cool on the tray until cool enough to handle then transfer to a wire rack to cool completely.
