Roasted Potatoes with Smoked Bacon

Ingredients

  • 465 g potatoes washed and cut into quarters
  • 5 smoked bacon medallions cut into strips
  • 1 white onion thinly sliced
  • 2 tsp paprika
  • 1/2 tsp ground black pepper
  • salt to taste
  • low calorie cooking spray
  • (optional) handful of chopped parsley or rosemary to garnish

Instructions

  1. Pre-heat the oven to 200°C.

  2. Add the potatoes to a large saucepan with enough cold water to cover. Bring to the boil and then simmer on a medium heat for 15-20 minutes until tender. Drain and allow to air dry for a few minutes.

  3. In a large mixing bowl, add 1/2 tsp of the paprika and the black pepper, then add the potatoes and mix well.

  4. Spray a baking tray with low calorie cooking spray and arrange the potatoes in a single layer. Spray with low calorie cooking spray, and cook in the oven for 20-25 minutes until crispy.

  5. 5 minutes before the potatoes are ready, spray a frying pan with low calorie cooking spray and then fry the bacon and onions for 5 minutes until golden.

  6. Add the remainder of the paprika to the bacon and onions and then add your potatoes. Mix well, season to taste and serve with some chopped parsley or rosemary to garnish.
