Spray a medium frying pan with low calorie cooking spray and place over a medium heat.
Add the minced pork and garlic and fry until sealed and lightly browned on all sides.
Add the honey, lime juice, chilli and soy sauce and fry for 20 - 25 minutes, stirring occasionally, until all juices have evaporated. Season to taste.
Spread the tortilla chips over a baking tray and spread the pork mixture over.
Sprinkle with grated cheese and grill on a low setting for 2 - 3 minutes until the cheese has melted.
Top with the tomatoes and red onion.
In a small bowl mix together the yoghurt and garlic granules and season to taste.
Spoon the yoghurt mixture over and sprinkle with coriander leaves. Serve at once.
