Herb Crusted Cod

  • 4 skinless, boneless cod fillets around 170g each
  • 4 tbsp low fat cream cheese

For the herb crust

  • 50 g wholemeal bread
  • 20 g Parmesan cheese finely grated
  • 1/4 tsp mustard powder
  • 1 clove of garlic finely chopped
  • 1 lemon zested
  • 5 g chives chopped
  • 5 g curly parsley chopped
  • salt and pepper to taste
  • low calorie cooking spray
  • extra chopped parsley to garnish optional


  1. Pre-heat the oven to 180ºC. Grease an ovenproof dish with low calorie cooking spray.

  2. Make the bread into breadcrumbs using a food processor or a coarse grater.

  3. Place all the herb crust ingredients together in a mixing bowl and mix well.

  4. Place the fish into the ovenproof dish and spread the cream cheese over the top of each piece. Season well with salt and pepper.

  5. Spoon the herb crust mixture over each piece of fish, pressing it down lightly.

  6. Place uncovered in the oven for 25 - 30 minutes, until the fish is cooked through. The fish should flake in the middle when it is cooked.

  7. Sprinkle with chopped parsley and serve.
