Festive Fruit Salad

  • 3 medium oranges peeled and cut into round slices
  • 2 medium pink or ruby grapefruits peeled and cut into round slices
  • 1 nectarine cut into segments
  • 4 fresh figs stalks removed and sliced into round slices
  • 100 g blackberries
  • 100 g raspberries
  • 100 g pomegranate seeds

For the orange and honey syrup

  • 2 medium oranges juice of
  • 10 g orange zest all pith removed, cut into fine strips (approx 2mm wide)
  • 4 tbsp clear honey
  • pinch of ground cinnamon
  • pinch of ground nutmeg

To garnish (optional)

  • 15 g pistachio nuts chopped


For the orange and honey syrup

  1. Place the orange juice, orange zest, honey, cinnamon and nutmeg in a small saucepan and place over a medium heat. Bring to a simmer, then lower the heat and simmer for 4 - 5 minutes, until the orange zest has softened.

  2. Remove from the heat, set aside and leave to cool.

For the fruit salad

  1. Arrange the oranges, grapefruit, nectarine, figs, blackberries, raspberries and pomegranate seeds on a large serving dish or serving bowl.

  2. Pour the cooled orange and honey syrup evenly over the fruit salad, along with the softened orange zest.

  3. Sprinkle the pistachio nuts over the top of the fruit salad if wished and serve.
