Ingredients

  • 500 g red onions peeled and finely sliced
  • 1 large courgette peeled and diced
  • 2 small apples peeled and diced
  • 2 garlic cloves peeled and minced
  • 3 tbsp granulated sweetener
  • 1 tsp ground ginger
  • 200 ml water
  • 100 ml red wine vinegar
  • 80 ml balsamic vinegar
  • low calorie cooking spray

Instructions

  1. Spray a large saucepan with low calorie cooking spray. Cook the onions and garlic over a medium heat for around 5 minutes until they begin to soften.

  2. Add the remaining ingredients. Bring to the boil and then reduce to medium heat. Cook for 40 minutes with the lid off until the chutney is thick and glossy.

  3. Spoon into a jar and leave to cool before refrigerating.
