Pre-heat the oven to 200°C.
Place all the filling ingredients into a saucepan. Cook over a medium heat for 10 minutes, until the apple begins to soften.
While the filling is cooking, spray the muffin tray with low calorie cooking spray.
Cut rounds out of the pastry using a cookie cutter or a mug. Push them into the muffin tray to make the pie cases.
When the filling is ready, spoon it into the pastry.
Use the leftover pastry to make lattices or cut shapes to place on the top of the pies. If you prefer you can leave the tops naked!
Spray any pastry on the top of the pies with low calorie cooking spray and place into the oven for 20 minutes, or until the pastry is cooked and golden.
You can serve these hot or cold, just let them cool for 10 minutes after you take them out of the oven as they will be very hot!
