Cheese and Pickle Twists

  • 1 sheet ready rolled light puff pastry 320g sheet
  • 40 g reduced fat mature Cheddar cheese finely grated
  • 2 tbsp sweet pickle or chutney smoother varieties work best
  • low calorie cooking spray
  • salt and freshly ground black pepper


  1. Pre-heat the oven to 180ºC.

  2. Line a baking sheet with baking parchment and spray with a little low calorie cooking spray.

  3. Unroll the pastry sheet, with the long side towards you.

  4. Spread the pickle along the long half closest to you. A pastry brush is great for this.

  5. Sprinkle the cheese, evenly on top of the pickle and fold the top half of the pastry over. Sprinkle with a little salt and pepper, if you wish.

  6. Using a sharp knife, cut into 32 strips, twist each strip and place on the baking sheet.

  7. Bake in the oven for 12-15 minutes until the pastry is crisp and golden.
