Pre-heat the oven to 180ºC.
Line a baking sheet with baking parchment and spray with a little low calorie cooking spray.
Unroll the pastry sheet, with the long side towards you.
Spread the pickle along the long half closest to you. A pastry brush is great for this.
Sprinkle the cheese, evenly on top of the pickle and fold the top half of the pastry over. Sprinkle with a little salt and pepper, if you wish.
Using a sharp knife, cut into 32 strips, twist each strip and place on the baking sheet.
Bake in the oven for 12-15 minutes until the pastry is crisp and golden.
