Pre-heat the oven to 190ºC.
Spray the baking tray with a little low calorie cooking spray and use to grease the tray.
Cut the slices of butternut squash into 6 triangles, approx. 10 x 7 cm each. Cut the triangles from the part of the squash slice without the seeds.
Place the squash slices on the greased baking tray in the shape of a pizza.
Spray the squash slices with low calorie cooking spray.
Place in the oven for 15 - 20 minutes, or until mostly tender. Some areas may be a little firmer than others at this point. Remove from the oven.
Place the tomato puree, garlic granules and salt and pepper in a small bowl. Mix well.
Spread the tomato puree mixture over the squash triangles.
Sprinkle with Cheddar cheese, then place a slice of mozzarella on top of each triangle.
Place one cherry tomato slice on top of each triangle and sprinkle with oregano.
Place in the oven for 15 - 20 minutes or until bubbling and golden on top.
Remove from the oven and sprinkle with chopped basil.
