Pre-heat the oven to 200°C.
Place the fries on an oven tray, spray with low calorie cooking spray and sprinkle with a pinch of salt. Cook in the oven for 35-40 minutes, turning halfway, until golden brown.
While the fries are cooking, add the oregano, thyme, salt, pepper and sumac to a mixing bowl and mix well.
When the fries are cooked, toss them in 1 tbsp of the spice mix and check the seasoning. Add more salt and pepper if needed, and serve.
