Sweet Potatoes with Feta and Harissa

Ingredients

  • 8 small sweet potatoes
  • 100 g reduced fat feta cheese crumbled
  • 4 tsp harissa paste
  • 4 spring onions finely chopped

Instructions

  1. Pre-heat the oven to 180ºC.

  2. Cut a slit through the skin along the length of each sweet potato and place on a baking tray.

  3. Place in the preheated oven for 45 - 50 minutes or until tender when a sharp knife is inserted.

  4. Squeeze the cooked sweet potatoes to open them up and place on a serving plate.

  5. Sprinkle crumbled feta over each sweet potato, then drizzle each one with 1/2 tsp of harissa paste.

  6. Sprinkle the chopped spring onion over each sweet potato and serve.
