Summer Pineapple, Lime, Feta and Quinoa Salad

Ingredients

  • 1 medium approx. 900g pineapple peeled, cored and cut into chunks
  • 2 limes juiced
  • 180 g dried quinoa
  • 180 g reduced fat feta cheese cut into cubes
  • 1 red pepper deseeded and sliced
  • 1 green pepper deseeded and sliced
  • 1 red onion peeled and diced
  • 1 red chilli deseeded and finely chopped
  • 10 g fresh coriander leaves chopped
  • 1 tbsp balsamic vinegar
  • salt and pepper to taste
  • 1 lime cut into wedges for garnish

Instructions

  1. Cook quinoa as per packet instructions, leave to one side to cool.

  2. Place all ingredients into a large mixing bowl and mix with the cooled cooked quinoa.

  3. Season with salt and pepper and serve with lime wedge for garnish.
