Summer Berry Cobbler

Ingredients

  • 600 g fresh strawberries hulled and halved
  • 200 g fresh blueberries
  • 200 g fresh raspberries
  • 120 g granulated sweetener
  • 80 g almond flour
  • 40 g oats
  • 1 tbsp corn flour
  • 1 lemon juiced
  • 2 medium eggs beaten with a fork
  • 30 g reduced fat spread
  • a pinch of salt

Instructions

  1. Pre-heat the oven to 200°C.

  2. Place all fruit into an ovenproof dish and add 100g granulated sweetener, cornflour, lemon juice and mix well.

  3. In a mixing bowl add almond flour, 20g granulated sweetener, oats, reduced fat spread and a pinch of salt. Using your fingers, rub together until it resembles breadcrumbs then add egg and mix well. The mixture should be crumbly but not too dry.

  4. Using a tablespoon, add large spoonfuls of the mixture onto the fruit, leaving a few gaps for the fruit to bubble through.

  5. Place in the oven and bake uncovered for 20-25 minutes, until the topping is golden and the fruit is bubbling.

  6. Serve warm.
