Pre-heat your oven to 180°C
Prepare your chicken for stuffing by slicing from the thickest edge to 3/4 of the way through the breast to make a pocket.
Add the peppers, onion, garlic and spreadable cheese to your mixing bowl and mix well. Season to taste with salt and freshly ground black pepper.
Stuff the chicken breasts with your cheese and pepper mix and place on an oven tray.
Sprinkle Cajun spices over the chicken breasts, making sure to evenly cover them and place in the oven.
Cook in the oven for 12-15 minutes until cooked all the way through. Check that the chicken juices run clear and no pinkness remains.
Serve sprinkled with spring onions.
