Ingredients

For the burgers

  • 500 g 5% fat beef mince
  • 4 60g wholemeal bread rolls
  • 4 light burger cheese slices
  • 1 red pepper deseeded and finely sliced
  • 1 tsp paprika
  • 1 tsp ground coriander
  • 1 tsp chilli powder mild or hot to taste
  • 1 tsp Worcestershire sauce or Henderson's relish
  • low calorie cooking spray
  • salt and pepper to taste

For the salsa

  • 1 red onion peeled and finely sliced
  • 1 medium avocado flesh only, mashed with a fork
  • 1 tomato
  • handful of fresh coriander 8g finely chopped
  • 1 tbsp lime juice
  • salt and pepper to taste

Instructions

  1. Mix the beef with the paprika, ground coriander, chilli powder and Worcestershire sauce. Season with salt and pepper and mix well.

  2. Shape the mince into 4 burgers that are around 1.5 cm (1/2 inch) thick.

  3. Place the frying pan over a medium heat and spray with low calorie cooking spray. Add the burgers and sliced pepper and cook the burgers for around 5 minutes on each side until they are cooked throughout. You can cut the top with a knife to check. The peppers should be glossy and soft when ready, if they are cooked before the burgers just remove them from the pan and set aside.

  4. While the burgers are cooking make the salsa. Cut your tomato into quarters and carefully remove the harder core and jelly with the seeds and discard. Finely dice the rest of the tomato and add to a bowl with onion, avocado, fresh coriander, lime juice and salt and pepper to taste.

  5. When the burger patties are cooked you are ready to assemble. Place a patty on a bun, add a slice of cheese, some cooked peppers and a dollop of salsa. Add the top of your bun and you are ready to serve!
