Sweet Potato and Miso Soup
A little bit salty and a little bit sweet, this warming soup will keep your taste buds guessing with every slurp! White miso paste, made from fermented soya beans, is a common ingredient in Japanese-style cooking. It has a deep, savoury, umami flavour that balances beautifully with the sweet potatoes in this recipe. Blend it until it’s silky smooth and velvety, then serve it with a crusty wholemeal roll on the side to wipe the bowl clean.
