Spicy Vegetable Fried Rice
Did someone say vegan-friendly fakeaway night? This super quick fried rice is jam-packed with colourful vegetables and protein-rich beans, making it a feast in itself. To recreate tantalising, takeaway-style textures, cook the carrots and bean sprouts quickly so that they retain their crunch, and add a sprinkling of crushed peanuts for good measure. When you’re making the sauce, don’t skip the sesame oil – you don’t want to miss out on those nutty, toasted flavours!

We use a pouch of microwave rice for this, but you can use 250g leftover cooked rice, as long as it has been cooled quickly and stored correctly in a refrigerator (see page 13).
