Summer Berry Betty
This fruity, nutty, crunchy-topped pudding is gorgeous with a swirl of reduced-fat aerosol cream. We use a medley of berries for the filling and bake them until their juices create an irresistibly sweet syrup. Traditional versions of this hearty pud usually involve drying out fresh breadcrumbs in the oven, to make them crispy. Our method is far simpler, thanks to the magic of panko breadcrumbs! A dash of zesty orange juice and mellow ground almonds add an extra boost of flavour in every satisfying, golden-topped bite.
