Lentil Stew with Herby Dumplings
We’ve packed so many vegetables, sweet potatoes and green lentils into this comforting stew, you’ll never even notice it’s completely meat free! While it simmers in the oven, it’ll fill your kitchen with the most mouth-watering smell. Forget about using suet to make dumplings – our herby ones skip this ingredient and turn out beautifully light, fluffy and delicious. There’s simply nothing better for dinner on a chilly, grey day!
Hints & Tips
Below we added some of our communities most common hints and tips. We hope you find them useful.
If you’ve frozen the stew and dumplings, when reheating after defrosting, you may need to add a splash of water if it has dried out a little in the freezer.
Use a food processor to finely chop the mushrooms; it will save a lot of time!
