Vegan and dairy-free, this quinoa chilli is sure to keep everyone at the table happy. Inspired by the convenience of microwave meals, we’ve kept prep to a minimum, so you can relax and let this simmer until ready to serve. With high-protein tinned beans, quinoa and plenty of vegetables, it’ll leave you feeling full all on its own. If you’re feeling really hungry, serve it with rice or a wholemeal bread roll to mop up what’s left. Like most chilli recipes, it tastes even better the next day.
