Inspired by the fragrant flavours of North African cooking, this tagine-style meal is made in your slow cooker, rather than an earthenware pot. Packed with chicken and chickpeas, there’s lots of protein in this dish, which is great for keeping you feeling fuller for longer. If you’re super organised, you can even prep all the ingredients the night before, pop them in the slow cooker pot and refrigerate it until you’re ready to cook. After simmering away all day, the tender chicken thighs will melt in your mouth, with a juicy pop of sweetness from the apricots.
