Slow Cooker Spiced Coconut Beef Stew
We’ve put together this warming Spiced Coconut Beef Stew with the flavours from a Southeast Asian Beef Rendang in mind. While traditional versions are usually dry with a thick, rich coating on the beef chunks, we’ve given you the option to ramp up the tastiness even more, by making our version with extra sauce. Every bite is bursting with aromatic ingredients, including coconut, tangy citrus and medium-hot spices. Before it all goes in the slow cooker, you’ll brown the beef and cook up the homemade spice paste in a frying pan. It’s well worth the small amount of extra washing-up – both steps do wonders for the flavours in this dish!
