Slow Cooker Vegetarian Goulash
Traditionally, goulash is a hearty stew of beef and veggies, but our vegetarian version packs in extra goodness by swapping out the meat for tender sweet potatoes and creamy butter beans. We've leta all the ingredients simmmer away in the slow cooker, until the sauce is rich, tomatoey and bursting with the smoky flavour of paprika. Don't skip the swirl of Greek yoghurt right before serving – the fresh tanginess of the yoghurt is just what you need to balance the sweetness of the stew.
