Thai-Style Basil Tofu Stir-Fry
Ideal for a meat-free Monday (or any day of the week!), this aromatic stir-fry contains everything you could want from a complete meal, including plenty of tasty veggies and filling, fluffy rice. Combining savoury soy sauce with zesty lime, it’s a speedy flavour sensation you can take from wok to plate with ease. Pressing tofu takes time, but you don’t want to skip that step – removing the moisture guarantees your plant-based ‘mince’ will absorb the flavours from the sauce, and hold a firmer, meatier texture.

Use extra-firm tofu in this recipe as it contains less liquid and has a 'meaty' texture which holds together well in a stir-fry.
