Tomato and Parmesan Risotto
Sometimes, the simplest recipes are the very best. This creamy one-pot risotto is so impressive, you’d never guess it’s made with a short list of tasty, budget-friendly ingredients. Starting with a rich base of garlicky, pan-fried onions and passata, you gradually add stock until your arborio rice has the perfect tender texture. With a gentle helping of cream cheese, salty Parmesan and fresh basil, this velvety risotto is too good to only enjoy once (luckily, it freezes like a dream!).
