Creamy Dijon Sauce

Ingredients

  • 2 small onions (approx 60g each) peeled and finely chopped
  • 1 clove garlic crushed
  • 200 g button mushrooms sliced
  • 1 chicken or vegetable stockpot made up with 300ml boiling water
  • 3 tbsp Dijon mustard
  • 1/2 tsp English mustard powder
  • 3 tbsp low fat cream cheese
  • 1 pinch black pepper
  • low calorie cooking spray

Instructions

  1. Spray a small saucepan with low calorie cooking spray and place over a low heat.

  2. Add the onion and fry for 5 - 10 minutes. Stir until golden and slightly softened.

  3. Add the garlic, mushrooms, mustards and chicken stock. Simmer over a low heat, uncovered, for 15 - 20 minutes.

  4. Remove the pan from the heat and stir in the cream cheese until completely blended.

  5. Season to taste with black pepper.
