Add the instant oat cereal, eggs, milk, vanilla, and sweetener to a bowl. Mix well, until smooth and combined.
Spray a frying pan with some low-calorie cooking spray, and set on a medium heat.
Pour the mixture in the pan to make one large pancake. Allow to cook for 2-3 minutes, until lightly golden brown underneath, then turn and cook for a few more minutes.
Place the pancake on a plate and arrange the fruit on one half. Then add the squirty cream.
Fold the pancake over, drizzle with syrup, and serve!
