Folded Berry Pancake

Ingredients

  • 40 g instant oat cereal
  • 2 eggs
  • 50 ml skimmed milk
  • 1 tsp vanilla extract
  • 1/2 tbsp granulated sweetener
  • low-calorie cooking spray
  • 40 g strawberries, cut in half
  • 40 g blueberries
  • 40 g raspberries
  • 3 tbsp reduced-fat squirty cream
  • 2 tsp low-calorie fruit syrup

Instructions

  1. Add the instant oat cereal, eggs, milk, vanilla, and sweetener to a bowl. Mix well, until smooth and combined.

  2. Spray a frying pan with some low-calorie cooking spray, and set on a medium heat.

  3. Pour the mixture in the pan to make one large pancake. Allow to cook for 2-3 minutes, until lightly golden brown underneath, then turn and cook for a few more minutes.

  4. Place the pancake on a plate and arrange the fruit on one half. Then add the squirty cream.

  5. Fold the pancake over, drizzle with syrup, and serve!
