Lemon and Mint Courgettes

Ingredients

  • 2 large courgettes, trimmed and cut into 1cm wide slices, approx. 190g each
  • 2 tbsp lemon juice
  • ½ tsp lemon zest, finely grated
  • ¼ tsp garlic granules
  • 5 g fresh mint leaves, stalks removed and roughly chopped
  • salt and black pepper, to taste
  • low-calorie cooking spray

Instructions

  1. Spray a large frying pan with low-calorie cooking spray and place over a medium heat.

  2. When the frying pan is hot, add the courgettes and stir-fry for 5 - 7 minutes, until light golden on all sides, but still bright green and not too soft.

  3. Add the lemon juice, lemon zest and garlic granules, and stir in. Cook for about 1 minute, taking care not to overcook otherwise the courgettes will become mushy. The courgettes should still retain a little crispness and their green colour.

  4. Stir in the mint and season to taste with salt and black pepper. Serve hot, with a main course of your choice.
