Spray a large frying pan with low-calorie cooking spray and place over a medium heat.

When the frying pan is hot, add the courgettes and stir-fry for 5 – 7 minutes, until light golden on all sides, but still bright green and not too soft.

Add the lemon juice, lemon zest and garlic granules, and stir in. Cook for about 1 minute, taking care not to overcook otherwise the courgettes will become mushy. The courgettes should still retain a little crispness and their green colour.
Step 4
Stir in the mint and season to taste with salt and black pepper. Serve hot, with a main course of your choice.
