We’ve cooked our BBQ Chicken Steaks on a charcoal grill as we just love that smokiness that charcoal brings to the flavour!

We didn’t just cook these on any old BBQ, we cooked them on a Char-Broil Gas2Coal BBQ!

To make the Garlic and Herb Chicken Steaks
Step 1
Mix together the garlic and herb seasoning, lemon juice and yoghurt in a decent sized bowl.
Step 2
Put one of the chicken breasts on a chopping board (thick part furthest away from you). Place one hand on top of the chicken and slice through the middle of the breast, horizontally with a sharp knife. Don’t slice all the way through. If you do you won’t be able to open it out and flatten it slightly. Repeat this with the remaining chicken.
Step 3
Add the chicken breasts to the marinade and coat them well.
Step 4
Take the chicken out of the bowl, put them in an airtight bag and refrigerate for at least an hour (or until you’re ready to use them).
Step 5
Cook on the BBQ for about 8 minutes, turning halfway through cooking. Check the temperature using a food thermometer (the meat should reach 170°F or 75°C) and make sure it’s not pink inside before serving.
To make the Cajun Chicken Steaks
Step 1
Mix together the cajun seasoning, lime juice, yoghurt and tomato puree in a decent sized bowl.
Step 2
Place one of the chicken breasts on a chopping board, with the thick part furthest away from you. Put one hand on top of the chicken, then using a sharp knife slice through the middle of the breast horizontally. Don’t slice all the way through as you want to open out the breast and flatten it slightly. Do the same with the remaining chicken.
Step 3
Add the chicken breasts to the marinade and coat them well.
Step 4
Take the chicken out of the bowl, put them in an airtight bag and refrigerate for at least an hour (or until you’re ready to use them).

How do you know when these BBQ Chicken Steaks are cooked?
You’ll need to cook these BBQ Chicken Steaks on the BBQ for around 8 minutes or until the chicken is cooked through and no longer pink inside.
Standard advice here in the UK is to cook food until it has reached 70°C and stayed at that temperature for 2 minutes. This is to keep your family safe.
How long can you keep BBQ Chicken Steaks in the fridge?
Once you’ve put it out, ideally you should eat it within 4 hours.
If you allow any leftovers to cool, make sure to refrigerate in a container with a lid and chill. You can keep leftovers of these BBQ Chicken Steaks in the fridge for approximately 3 days or so.

For the cajun chicken it says lime juice in the ingredients list but in the instructions it says lemon? Which is it please

The recipe ingredients mentions 1/2 Lemon Juice only…. is that half a lemon, or 1/2 tbsp or 1-2? Could you please explain further. Thank you

In the cajun chicken recipe it says tomato puree in the ingredients but I can not see it in the instructions part?

Could you cook these in the oven please and if so, should I just put them in uncovered, or covered with foil? What temperature and time would you recommend? Looking for something to go with the orzo salad. ☺️ Thank you. x
