There’s no need for anything fancy to make these tasty Mexican Potatoes! A good baking tray is always a must have for the kitchen. Most large supermarkets stock them, but you can also pick one up over on Amazon!

How Weight Watchers friendly are these Mexican Potatoes?

These Mexican Potatoes certainly pack a punch, and a few go a long way! There are 3 Smart Points per portion.

You could always replace some of the potatoes with carrots or even courgette to reduce the Points!

How many Calories are in these Mexican Potatoes?

Our Mexican Potatoes are a great low fat and low calorie side dish. If you were to buy them in the supermarket, they’d likely be coated in oil and fat and have a much higher calorific value.

There are just 115 Calories per portion in our version!

Can I freeze these Mexican Potatoes?

This recipe can be frozen, but please remember to do the following;
– Freeze it as soon as it is cold enough
– Use a container or bag that is suitable for freezing.
– Defrost thoroughly before reheating.

Make sure it’s piping hot before serving!

How do I make these Mexican Potatoes?

Step 1

Preheat the oven to 180°C. 

Step 2

Chop the potatoes into 2cm cubes and place into a microwaveable bowl.

Step 3

Microwave for 3 minutes to soften slightly. Meanwhile, mix all the spices in a bowl.

Step 4

Into the potatoes, add the chopped onion and spices. Mix thoroughly. Place on a baking tray and spray with Low Calorie Cooking Spray.

Step 5

Place in the oven for 10 minutes. After this time, remove from the oven, turn the potatoes and spray again with Low Calorie Cooking Spray. Cooking for a further 5-7 minutes until crispy and golden.

- Make sure it is piping hot all the way through before serving.

If making this recipe Gluten Free please make sure to check the ingredients that you’re using

Especially things such as; 

- Stock cubes
- Soy sauce - substitute with Tamari.
- Worcestershire sauce - substitute with Henderson’s Relish.
