These Mexican Potatoes are a slimming friendly, spicy side dish that fit the bill whether you’re counting calories or following a plan like Weight Watchers.
Our Mexican Potatoes are packed full of herbs and spices to remind you of the sunshine and they’re totally adaptable to taste too. If you don’t like spicy food then you can either add less or no chilli powder and flakes. Alternatively you could also spice it up with an extra pinch or two if you’d prefer!
These Mexican Potatoes are a great side dish that are also low in calories and fat. If you were to buy them in the supermarket, then they’d likely be coated in oil and fat and have a much higher calorific value too!

Preheat the oven to 180°C.
Chop the potatoes into 2cm cubes and place into a microwaveable bowl.
Microwave for 3 minutes to soften slightly. Meanwhile, mix all the spices in a bowl.
Into the potatoes, add the chopped onion and spices. Mix thoroughly. Place on a baking tray and spray with low calorie cooking spray.
Place in the oven for 10 minutes. After this time, remove from the oven, turn the potatoes and spray again with low calorie cooking spray. Cooking for a further 5-7 minutes until crispy and golden.

How do you know when these Mexican Potatoes are cooked?
You should cook these Mexican Potatoes for 10 minutes before turning them and cooking for a further 5 – 7 minutes until crispy and golden.
Standard advice here in the UK is to cook food until it has reached 70°C and stayed at that temperature for 2 minutes. This is to keep your family safe.
How long can you keep Mexican Potatoes in the fridge?
Once you’ve put it out, ideally you should eat it within 4 hours.
If you allow any leftovers to cool, make sure to refrigerate in a container with a lid and chill. You can keep leftovers of Mexican Potatoes in the fridge for approximately 3 days or so.

How do I reheat Mexican Potatoes?
From chilled: Place in a microwave proof container with loosely fitting lid and heat for 4-7 minutes until piping hot.
From frozen: Allow to defrost, and heat covered in the microwave for 3-5 minutes then stir. Cook for a further 5-7 minutes until piping hot.
