There are two ways to make the base of this Mexican Slaw, the easy way or the hard way.

Mexican Slaw – the easy way

Let’s start with the easy way. You can get the slaw base mix from Asda, where it comes as part of a Ranch Salad Kit. 1 pack will serve 2 people.

In the pack, you get the slaw, some ranch dressing and bacon bits. You can save the bacon bits and Ranch dressing for another time, but don’t forget to work out the calories, Points and any other nutritional values before you use them.

Just make the dressing and stir it in to the slaw mix.

Mexican Slaw – the ‘proper’ way

The harder way is to mandolin all of the ingredients yourself. This Syn Free Mexican Slaw isn’t difficult if you have a mandolin mind!


Don’t have one? You really should pick this one up from Amazon. It’s sturdy, and by far the safest mandolin we’ve used. It makes making slaw & slicing fruit and vegetables so much easier and quicker.

If you’re scared of slicing off your fingers, you could always buy a pair of cut-resistant gloves to protect your fingers too.


Next up is the dressing & the most important bit is the lime juice. It gives this Syn Free Mexican Slaw zing and balances the sweetness and heat perfectly.

It’s important that you let the slaw sit in the dressing for 5-10 minutes. Otherwise, you won’t get the full flavour effect.

INGREDIENTS

INSTRUCTIONS
  1. Mix all the dressing ingredients together in a large bowl and mix well. Make sure the sweetener dissolves
  2. If you're using the Asda ranch mix, empty it into a bowl, and discard of both sachets. If you're prepping it yourself mandolin all the slaw ingredients & place into the bowl with the dressing in
  3. Let the slaw sit for 5-10 minutes in the fridge
  4. Top with slices of lime & serve!
