This Mexican Slaw joins the other slaws that we’ve made, like our Asian Slaw and Coleslaw.

It’s a perfect slimming and weight watchers friendly side dish to enjoy no matter what weight loss plan you’re following – you don’t need to count any Weight Watchers points and it only contains 85 calories per portion! Not only that, but it’s suitable for most diets, including dairy free, gluten free, vegetarian and vegan.

You can pair this Mexican Slaw with anything from the BBQ – we’d recommend our delicious Grilled / BBQ Courgettes recipe – it’s also great alongside a salad. Spice up the recipe by adding some cayenne pepper!

Step 1

Mix all the dressing ingredients together in a large bowl and mix well. Make sure the sweetener dissolves.

Step 2

Use a mandolin to finely slice all the slaw ingredients and place into the bowl with the dressing in.

Step 3

Let the slaw sit for 5-10 minutes in the fridge.

Step 4

Top with slices of lime and serve!

How long can you keep Mexican Slaw in the fridge?

Once you’ve put it out, ideally you should eat it within 4 hours.

If you want to keep any leftovers, make sure to refrigerate in a container with a lid and chill. You can keep leftovers of Mexican Slaw in the fridge for approximately 3 days or so.

Ingredients

For the slaw

  • 2 broccoli stems
  • 2 large carrots
  • ½ red cabbage
  • ½ white onion
  • 3 spring onions

For the dressing

  • 4 tbsp lime juice (juice of 2 limes)
  • 1 tsp ground cumin
  • 1 tsp granulated sweetener
  • ½ tsp paprika
  • ½ tsp ground coriander
  • ½ tsp salt
  • ¼ tsp pepper
  • ½ chilli pepper
  • 1 lime cut into wedges
