Spray a large frying pan with low-calorie cooking spray and set on a medium heat.
Add the onion, pepper, and garlic, and fry for 8 minutes — until softening.
Add the vegetarian chicken pieces and sweetcorn, and fry for a further 5 minutes.
Add the stock cube to the water, and stir until dissolved.
Add the white wine vinegar, soy sauce, Henderson’s relish, sweetener, chopped tomatoes, and tomato puree. Stir well and simmer for 20 minutes, until thickened.
Add the pineapple, and simmer for a few minutes until heated through. Sprinkle over the spring onion, and serve.
