Vegetarian Sweet and Sour

Ingredients

  • 2 onions, peeled and sliced
  • 2 peppers, deseeded and diced
  • 2 garlic cloves, peeled and crushed
  • 400 g vegetarian chicken pieces (like Quorn)
  • 156 g tinned sweetcorn, drained
  • 350 ml boiling water
  • 1 vegetable stock cube
  • 4 tbsp white wine vinegar
  • 1 dash soy sauce
  • 1 dash Henderson's relish
  • 3 tbsp granulated sweetener
  • 400 g chopped tomatoes
  • 2 tbsp tomato puree
  • 165 g fresh pineapple, chopped into chunks
  • 2 spring onions, finely sliced

Instructions

  1. Spray a large frying pan with low-calorie cooking spray and set on a medium heat.

  2. Add the onion, pepper, and garlic, and fry for 8 minutes — until softening.

  3. Add the vegetarian chicken pieces and sweetcorn, and fry for a further 5 minutes.

  4. Add the stock cube to the water, and stir until dissolved.

  5. Add the white wine vinegar, soy sauce, Henderson’s relish, sweetener, chopped tomatoes, and tomato puree. Stir well and simmer for 20 minutes, until thickened.

  6. Add the pineapple, and simmer for a few minutes until heated through. Sprinkle over the spring onion, and serve.
