Our Vegetarian Sweet and Sour is full of flavour, slimming-friendly, and gives you all the taste you’d expect from this classic Chinese favourite. We usually make it with Quorn chicken pieces, but you can swap in another meat-free option, or just bulk it out with extra veg. Either way, it’s fully vegetarian and dairy-free!
For the perfect pairing, serve it with our Salt & Pepper Chips. Crispy, tasty, and utterly moreish, they go brilliantly with this dish and any of our other Chinese-style fakeaways.

How many calories are in this Vegetarian Sweet and Sour?
There are only 302 calories in one serving of this Pickle Toad in the Hole, which means it falls into our Everyday Light category. These are all dishes under 400 calories, ideal for when you’re after a lighter bite (just like the category name suggests!), and they fit with diet plans like Weight Watchers if you’re calorie counting.
As a guide, an average man needs around 2,500kcal (10,500kJ) a day to maintain a healthy body weight. For an average woman, that figure is around 2,000kcal (8,400kJ) a day. Step 1
Spray a large frying pan with low-calorie cooking spray and set on a medium heat.
Step 2
Add the onion, pepper, and garlic, and fry for 8 minutes — until softening.
Step 3
Add the vegetarian chicken pieces and sweetcorn, and fry for a further 5 minutes.
Step 4
Add the stock cube to the water and stir until dissolved.
Step 5
Add the white wine vinegar, soy sauce, Henderson’s relish, sweetener, chopped tomatoes, and tomato puree. Stir well, and simmer for 20 minutes — until thickened.
Step 6
Add the pineapple and simmer for a few minutes, until heated through. Sprinkle over the spring onion, and serve!

How do you know when this Vegetarian Sweet and Sour is cooked?
When in the pan, let the mixture boil down for a good 20 minutes or so – this will give it chance to thicken up a little and taste even better.
Standard advice here in the UK is to cook food until it has reached 70°C and stayed at that temperature for 2 minutes. This is to keep your family safe.
How long can you keep this Vegetarian Sweet and Sour in the fridge?
Once you’ve put it out, ideally you should eat it within 4 hours.
If you allow any leftovers to cool, make sure to refrigerate in a container with a lid and chill. You can keep leftovers of Vegetarian Sweet and Sour in the fridge for approximately 3 days or so.
Can I freeze Vegetarian Sweet and Sour?
Yes you can! This recipe can be frozen, but please remember to do the following:
- Freeze it as soon as it is cold enough.
- Use a container or bag that is suitable for freezing.
Don’t forget to add a label with what it is, and on what date you put it in the freezer!
How do I reheat Vegetarian Sweet and Sour?
From chilled: Place in a microwave proof container with loosely fitting lid and heat for 4-7 minutes until piping hot.
From frozen: Allow to defrost, and heat covered in the microwave for 3-5 minutes then stir. Cook for a further 5-7 minutes until piping hot.
