Bread and butter pudding has always been one of our favourite dishes, but the traditional recipe just isn’t very slimming friendly at all!
Our Mini Bread and Butter Puddings have all of the things that you’d expect from a bread and butter pudding. Bread, fruit, vanilla custard…everything except the extra calories!

Pre heat the oven to 180°C.
Step 2
Cut the crusts off the bread, then roll it out to a 2mm thickness.
Step 3
Whisk the eggs together with the sweetener, milk, cinnamon and vanilla.
Step 4
Spray 12 cups of a silicone mini muffin tray with some low calorie cooking spray, then spray both sides of the bread rounds.
Step 5
Place the bread in the egg mixture and let it soak in for a few minutes.
Step 6
Place one soaked round of bread in the bottom of each cup, then divide the sultanas evenly between each cup.
Step 7
Pour the remaining egg mixture evenly between all 12 muffin cups.
Step 8
Bake in the oven for 15 – 20 minutes until they are set and golden brown.
Step 9
Allow them to cool for a few minutes then remove from the tray and serve.
