As you will probably know Slimming World have brought out some new recommendations regarding the syn value of granulated sweeteners. Slimming World have confirmed what this change means.

Where there is 1 tbsp or more being used per serving they recommend members count 0.5 Syn per tbsp. If using smaller amounts, like a pinch or teaspoon, there’s no need to worry about Syns at all.

The recipe for this 1 Syn Mini Bread and Butter Puddings uses 3 tablespoons of sweetener and is divided into 12 portions. That’s about quarter of a tablespoon per portion, so there’s no need to add any syns on for the sweetener itself.

So, back to the 1 Syn Mini Bread and Butter Puddings

Bread and butter pudding has long been a favourite in our house, but yet again, the traditional recipe isn’t very Slimming World friendly at all. So we thought we’d try and a low Syn bite size version.

They have everything you would expect from a bread and butter pudding. Bread, fruit, vanilla custard. Everything except the syns!

This is how we calculated the syns for these 1 Syn Mini Bread and Butter Puddings

This recipe includes wholemeal bread and milk, but rather than using up part of your Healthy Extras we’ve decided to keep it simple and just syn it.

12 discs of wholemeal bread at 2mm is approx 45g – 4.5 syns (we’re working on the proviso that 60g of wholemeal bread = 6 syns) Also, don’t forget different brands may vary in weight. To make sure we get the correct weight we always weigh the bread after we’ve cut out the circles.

25ml of Skimmed Milk is 0.5 syns

20g of Sultanas equals 3 syns

This totals 8 syns for the whole lot, but don’t forget we need to round up syn values.

INGREDIENTS

INSTRUCTIONS
  1. Pre heat the oven to 180°C
  2. Cut the crusts off the bread, then roll it out to a 2mm thickness
  3. Whisk the eggs together with the sweetener, milk, cinnamon and vanilla
  4. Spray 12 cups of a silicone mini muffin tray with some Butter Frylight, then spray both sides of the bread rounds
  5. Place the bread in the egg mixture and let it soak in for a few minutes
  6. Place one soaked round of bread in the bottom of each cup, then divide the sultanas evenly between each cup
  7. Pour the remaining egg mixture evenly between all 12 muffin cups
  8. Bake in the oven for 15 - 20 minutes until they are set and golden brown
  9. Allow them to cool for a few minutes then remove from the tray and serve

RECIPE NOTES

This recipe can be frozen, but please remember to do the following;

- Freeze it as soon as it is cold enough

- Use a container or bag that is suitable for freezing.

- Defrost thoroughly before reheating (you can use the defrost setting on your microwave.)

- Make sure it is piping hot all the way through before serving.
