We know there are lots of other Lemon Chicken recipes out there, but this is how we do ours so we thought we’d share.

Note that we use fresh pineapple in this recipe. Be sure to add it at the very last second so it doesn’t cook. That way you do not have to syn it.

What is Xanthan Gum?

One of the most important parts of this recipe is the Xanthan Gum. What is this strange ingredient I hear you ask. It’s a natural gluten free stabiliser that thickens hot and cold liquids, doesn’t clump and stops sauces from splitting. It’s bloody marvellous and best of all it’s syn free! 1/4 tsp of Xantham gum does the same job as 1 tbsp of flour. Crazy!

You can buy Xanthan Gum here on Amazon, or down the gluten free aisle of your local supermarket. It’s not cheap, but a little goes a long, long way.

INGREDIENTS

INSTRUCTIONS
  1. Spray the frying pan with Frylight and cook the onions, chilli and chicken on a medium heat
  2. When the onion has softened and the chicken browned slightly remove from the pan and set aside
  3. Add the stock, onion powder and Robinsons Lemon Squash to the pan and bring to the boil
  4. Allow to simmer for a few minutes. Place 200ml of the sauce into a jug and whisk in the xanthan gum a 1/4 of a tsp at a time. You will need to whisk well - and keep whisking!
  5. When the right consistency is achieved return sauce to the pan and add the chicken
  6. Add the lemon slices and cook gently for another 5 minutes
  7. Stir in the pineapple and remove from the heat immediately so you don't have to syn it
  8. Taste, and add a little Sukrin 1 or sweetener if it's a bit to sour
  9. Serve on a bed of rice or noodles

This recipe can be frozen, but please remember to do the following;

- Freeze it as soon as it is cold enough.
- Use a container or bag that is suitable for freezing.
- Defrost thoroughly before reheating (you can use the defrost setting on your microwave.)
- Make sure it is piping hot all the way through before serving.

If making this recipe Gluten Free please make sure to check the ingredients that you’re using

Especially things such as; 

- Stock cubes
- Soy sauce - substitute with Tamari.
- Worcestershire sauce - substitute with Henderson’s Relish.
- Etc.

  1. Would you say that this is a freezer friendly recipe?

    I have tried this recipe before and loves it. I am trying to find some recipes that I can make then pop in the freezer for days of no time or no food.

  2. Just made this and found it hard to get the tartness out. Felt like I added quite a bit of sweetener. Also, I added more lemon squash as it just tasted like chicken stock to start with. I agree with the rating. First time I have used xanthan gum and I love it! What a find.

      Xanthan Gum is used as a thickener, but you only need a very small amount compared to flour or cornflour. You can find it in the Free From section of most supermarkets

      The pineapple is added to give some sweetness and balance the sourness of the lemon. I’m sure you could add other veg to bulk it out, too. Maybe some water chestnuts, pak choi, sweet peppers, that sort of thing. Hope that helps

  7. Made this today, tastes great, only thing is I’ve kept a portion for tomorrow so will have to syn the pineapple as it’ll be reheated. Next time I’ll put some pineapple aside for next day. Great recipe though, many thanks.

      Personally, I wouldn’t Syn it if reheating it the next day, but as we always say, everyone is different so if you want to allow a syn or two just to be on the safe side then you should.

      Did you add some sweetener to taste, as suggested in the recipe? The pineapple can help to take the edge off the sharpness of the lemon, too. 🙂

  9. I’m probably being silly but when taking out 200ml of the liquid, do you add the gym to the remainder or just the 200 ml? TIA

      You take out the 200ml of liquid so that you can whisk in the Xanthan gum. Once the Xanthan gum has blended with the liquid you add it back to the rest of the mixture. By adding the gum this way, you’ll have a smooth lemon sauce. 🙂

    Thinking of making this but want to know if I use cornflour instead of xantham gum, how much should I use?

    1. Hi Rebecca
      You’d probably need around a level tbsp, slaked with a little water. Add half of it first, you may not need the full tbsp. Remember to add the syns for the cornflour. 🙂

  11. I have tried many a recipe for lemon chicken and this is “BY FAR” the best i have ever had…… i did not add the pineapple as is seemed wrong and no chilli. It is a stunning recipe and i will be having this often. The Xantham gum is an amazing find and we are grateful as ever – keep them coming 🙂

      Lemon juice would be too tart on it’s own. We have found that lemon squash gives just the right balance without being unpleasantly acidic/sharp.

  12. Delicious! I’ve just made this and I thought it was great! I feel like I’ve had a take away without the bloating and guilt!!

    I didn’t need the sweetener and added some more lemon squash but I don’t have a sweet tooth, I didn’t find it tart. Added extra veg to bulk up and get my superfree.

    First time I’d used the gum – really straight forward to use and excellent thickener

  13. Can the sauce be made in advance and warmed later? Having a dinner party and selected this as as the main but want to know if I can get most of it ready before hand and reheat (sauce that it, don’t want to over cook my chicken) TIA
