We know there are lots of other Lemon Chicken recipes out there, but this is how we do ours so we thought we’d share.
Note that we use fresh pineapple in this recipe. Be sure to add it at the very last second so it doesn’t cook. That way you do not have to syn it.
It’s great served on a bed of rice or noodles and a perfect alternative to those syn laden takeaway meals.

What is Xanthan Gum?
One of the most important parts of this recipe is the Xanthan Gum. What is this strange ingredient I hear you ask. It’s a natural gluten free stabiliser that thickens hot and cold liquids, doesn’t clump and stops sauces from splitting. It’s bloody marvellous and best of all it’s syn free! 1/4 tsp of Xantham gum does the same job as 1 tbsp of flour. Crazy!
