We love Boxing Day! All that’s left to do is sit back, relax and make the most of the leftovers from your festive feast. There’s no tastier way to appreciate your favourite trimmings all over again than this Boxing Day Sandwich.
You’ll need to call dibs on the best leftovers from the day before: we’re dreaming of sliced turkey, pigs in blankets, and stray veggies. We’ve even added some extra-special magic by rustling up a surprisingly simple Christmassy slaw, using carrots, sprouts and store cupboard staples.
There’s nothing to stop you changing and adapting this recipe – everyone’s idea of the ultimate Boxing Day Sandwich is different! You could add more stuffing, another dollop of cranberry sauce or squeeze in extra veg (just be sure to count the calories, if you’ll be tracking).

In a bowl combine the carrot, sprouts and spring onion. Add the lime juice, rice vinegar, sweetener and season with salt and pepper. Leave to one side.

Toast the bread until lightly golden. In a small bowl combine the mayonnaise and sriracha.
Step 3
Spread the mayonnaise onto 2 slices of bread and cranberry sauce onto the other two slices of bread.
Step 4
Starting with mayonnaise side up add the lettuce, the turkey, pigs in blankets and finish with the slaw. Top with the other slice of bread cranberry sauce side down.

How do you know when this Boxing Day Sandwich is ready?
This recipe is ready once you’ve finished everything off with a dollop of the slaw.
If you’re cooking turkey from scratch, a breast fillet will need around 20-25 minutes to cook in a 170°C oven.
To add pigs in blankets and bacon medallions, place bacon-wrapped sausages in the oven for 20-25 minutes at 190°C.
Here in the UK, the standard advice is to cook food until it has reached 70°C and maintained that temperature for 2 minutes. This is to keep you and your family safe.

Tip 2: If you have no leftover pigs in blankets use 2 reduced-fat sausages and 2 bacon medallions. Wrap the bacon round each sausage and cook at 190°C for 20-25 minutes.
