Crustless Quiche Lorraine

A beautiful summery dish that even my 5 year old loved. I’d planned to put the 5 in the freezer for lunches but that didn’t happen as son wanted them the next day too. Only took 1/2 hour to cook so nice and quick too. I will be making these again.
