Slimming-friendly Sweet Treat Recipes for a Macmillan Coffee Morning

Recipes for a Macmillan Coffee Morning - Pinch of Nom Slimming Recipes

It’s almost time for the World’s Biggest Coffee Morning! The annual fundraising event takes place on 29th September 2023, although you can host your own Macmillan Coffee Morning at any time. Find out more about the event on the official Macmillan website.

Each year people, businesses and communities put on a cracking spread of sweet treats and hot drinks, all in order to raise a little money for people living with cancer. The big question is: what will you be baking?

Whether you’re hosting your own event or dropping some goodies off at a local coffee morning, we’re here to help with ideas for slimming-friendly sweet treats that’ll offer a lighter (but just as delicious) option to enjoy with your cuppa!

Cream Tea Scones

A staple for afternoon tea, who’s to say you can’t nibble on one of these Cream Tea Scones at a coffee morning too? Our fluffy little scones are topped with a dollop of sweetened strained Greek yoghurt, rather than heavy cream.

Just as satisfying and indulgent-tasting, this means you can pop one on your plate for only 93 calories, fruity strawberry jam included. Our recipe will make 16 servings, but it’s nice and easy to scale it up if you’re expecting a big turnout at your Macmillan Coffee Morning!

Lemon Curd Swiss Roll

Fresh from our Budget cookbook , this Lemon Curd Swiss Roll was the top pick in the Pinch of Nom offices for a coffee morning themed bake off! Keep an eye out on our social channels to see what happened when we challenged the non-chefs on our team to bake the best one!

Light, lemony and easy to sell by the slice, you can’t go wrong with this slimming-friendly sweet treat on the table. At 126 calories per slice, the hardest bit is not gobbling it up before you’ve even had a chance to sit down with your hot drink.

Biscoff Banana Bread

Another budget-friendly banger, if our Biscoff Banana Bread is as popular at a coffee morning as it is on our Facebook group, it’ll sell out in minutes! Flick to pages 152-153 of Pinch of Nom: Budget to find the full recipe for this dreamy flavour combo.

One of the tastiest ways to use up leftover bananas that are starting to look a little past their best, a banana bread is perfect when you need a baked treat that’s mess-free and easy to transport. Once your guests feast their eyes on the drizzled Biscoff spread topping, with those irresistible chocolate chips, we’re guessing slices will be flying out the door!

Biscoff Cheesecake

We can’t talk about Biscoff without mentioning our epic Biscoff Cheesecake. This is the recipe to make if you want to impress! The base is made from crumbled Lotus Biscoff biscuits, and there’s Biscoff spread in the creamy filling, as well as drizzled on the top, to make sure you get oodles of caramel flavour in every single bite.

Despite all that biscuity deliciousness, this slimming-friendly sweet treat works out at just 234 calories per slice. Pour yourself a piping hot cup of coffee, get comfy and enjoy a few forkfuls of Biscoff heaven!

Creamy Strawberry Mini Meringues

If what your Macmillan Coffee Morning is missing is a few little bite-size treats, whip up a batch of Creamy Strawberry Mini Meringues. The crunchy shells are light and airy, filled with a creamy blend of reduced-fat cream cheese, sweetener, vanilla essence and a slice of fresh strawberry.

Once the two halves are sandwiched together, you’ll need to pop these delightful bites in the fridge for at least half an hour to firm up before serving.

Double Choc Chip Cookies

How about a biscuit to go with your brew? No coffee morning is complete without a plate of freshly baked cookies on offer, and these Double Choc Chip Cookies won’t disappoint when it comes to chocolate-y flavour.

Just like the name suggests, we’ve doubled up on chocolatiness by mixing cocoa powder into the cookie batter, then throwing in some chocolate chips as well. You’ll end up with a batch of proper, gooey cookies, that can be eaten right away or stashed in the freezer for a coffee morning at a later date.

Carrot Cake with Cream Cheese Frosting

Slimming-friendly sweet treats don’t come much dreamier than these lightly-spiced individual Carrot Cakes with Cream Cheese Frosting. If you’re planning on baking up a storm ahead of a Macmillan event, you’ll be pleased to see you only need a few ingredients to make these.

Freshly grated carrot keeps the little cakes nice and moist, with a decent dollop of cream cheese topping to balance the sweetness and warming spices. We’ve left our cakes fairly simple, but there’s nothing to say that you can’t get creative with decorations to make them extra eye-catching!

Pineapple Upside Down Cake

Take something a little bit different to your coffee morning, and treat friends and family to a slice of our retro-inspired Pineapple Upside Down Cake. This fancy-looking pud has a caramelised topping that adds such a satisfying crunch.

No matter what other goodies are on offer, this bright, fruity treat is guaranteed to be an eye-catcher. It’s delicious hot or cold, and just 187 calories per slice!

Cinnamon Drizzle Squares

You might expect to see a lemon drizzle cake at a coffee morning (and we’ve got the perfect recipe for one right here), but how about taking along these Cinnamon Drizzle Squares instead?

The fluffy sponge squares only call for 6 ingredients, and that’s including the icing sugar to make the sticky-sweet glaze for the top. Cinnamon and coffee are a dreamy flavour combo, so pour yourself a fresh mug and sit back with this cosy-tasting, slimming-friendly sweet treat.

Chocolate Brownies

We couldn’t have a Macmillan Coffee Morning without our Chocolate Brownies on the lineup. This golden oldie has been one of our most popular recipes for a long time, and it’s easy to understand why.

Squidgy, gooey squares of chocolate heaven, they couldn’t be easier to make. If you’ve tried them before, you’ll know that the decadent chocolate flavour is incredibly moreish – which is why you’ll be glad to hear they’re only 59 calories per brownie!
