It's a direct swap for risotto rice that's a doddle to cook in your slow cooker, and it's packed with nutritious, filling fibre. You'll want to give the barley a quick toast first, to bring out that lovely natural nuttiness. Combined with earthy mushrooms, sweet leeks and tangy Cheddar, you're left with a rich, wholesome, slimming-friendly bowl of goodness.
