This Winter Berry Ice Cream is the perfect choice for an after dinner sweet treat and is so rich and creamy that you’d never guess that it was dairy free!
The berry sauce is flavoured with ginger and a hint of balsamic vinegar which gives it a really rich, festive taste.

You’ll need to use a food processor to blitz together your frozen berries and bananas.

Step 1
Place the sliced bananas in a single layer on a baking tray and pop into the freezer overnight.
Step 2
Lift the frozen banana slices out of the freezer 5 minutes before you are ready to make the ice cream so that they can soften slightly.
Step 3
Add the frozen berries to the sliced banana in a food processor and blitz until smooth.
Step 4
Transfer to a freezer proof container and sprinkle over the dark chocolate, stirring it a little to combine. Pop the ice cream back into the freezer for 5 minutes whilst you make the berry sauce.
Step 5
In a small saucepan add the berry sauce ingredients and bring the pan to the boil. Lower the heat and simmer for 4 minutes until the sauce has thickened.
Step 6
When you are ready to serve, scoop the ice cream into bowls and top with a little drizzle of the berry sauce.

Can the ice cream mixture be made ahead of time and kept in the freezer or does the chilling need to be kept to a minimum?

Hey Seraphie, once you’ve made the ice cream it can be kept in the freezer for up to 3 months in a freezer proof container so you can make it ahead and eat when ready, hope that helps!

Hi Hayley, lift your bananas out of the freezer a few minutes before you are ready to make the ice cream this will make it a lot easier to blitz them. If your mix isn’t coming together add a dash of water and this should help!

Hi Charlie,
Bananas are are one of the main ingredients in this recipe and are important to it’s success. This is because of their texture and natural sweetness. When they’re frozen and then blitzed in a food processor they become creamy and smooth and closely resemble the texture of ice cream. This would be difficult to achieve without the banana in this recipe.
There is an ice cream recipe in our second book, ‘Everyday Light’ that you may like, it’s called Raspberry and Elderflower Swirl and doesn’t have bananas in it. Do hope this helps.
