These Low Syn Mini Christmas Cheesecakes are the perfect party dessert. Packed with all the flavours of Christmas and rich and creamy to boot! You can use whatever booze you like, or replace it with orange juice if you prefer.

These Low Syn Mini Christmas Cheesecakes are just 1 Syn each! That is a hefty Syn saving when compared to a standard cheesecake, and they certainly don’t compromise on flavour or richness!

You could top these Low Syn Mini Christmas Cheesecakes with a squirt of reduced fat whipped cream, or some fat free yoghurt.

Whatever you do, don’t forget to check the Syn Value and adjust accordingly.

It is important in this recipe, to use a sweetener which weighs the same as sugar. If you are using a powdered sweetener then please check how it compares to sugar. In some cases you’ll need to use less because powdered sweetener weighs less.

Synning the sweetener

As you will probably know Slimming World have brought out some new recommendations regarding the Syn value of granulated sweeteners. Slimming World have confirmed what this change means.

Where there is 1 tbsp or more being used per serving we recommend members count 0.5 Syn per tbsp. If using smaller amounts, like a pinch or teaspoon, there’s no need to worry about Syns at all.

The recipe for these Low Syn Mini Christmas Cheesecakes uses 3 tablespoons of sweetener and is divided into 24 portions.

That’s way less than a tablespoon per portion, so there’s no need to add any Syns for the sweetener itself.

How do I make this Low Syn Mini Christmas Cheesecakes recipe?

Step 1

Spray the silicone mini muffin tin with Frylight. In a small bowl, soak the raisins in the rum.

Step 2

Crush the digestives into crumbs and place into the base of each muffin mould – this is around a teaspoon in each. Spray again with Frylight and pat into an even layer.

Step 3

In a mixing bowl, combine the Lightest Philadelphia, eggs, vanilla extract, mixed spice, sweetener and yoghurt until smooth. Tip in the soaked raisins and remaining rum from the small bowl and mix well.

Step 4

Distribute between the muffin moulds and place on a baking tray. Cook in a preheated oven until set and just starting to colour on top.

Step 5

Leave to cool in the tin and carefully pop out and serve!

  1. I don’t drink alcohol so wondering Could these be made completely without the rum? Or would it have to be substituted with something else?

      One of our members has suggested using mincemeat instead of the rum-soaked raisins. Maybe you could try this too?

      The quark probably wouldn’t bake well, as it can split when used for cooking if it isn’t handled very carefully. We would recommend sticking with the Philadelphia for best results. 🙂

      I think that 1 to 1.5 tbps should be plenty. Mincemeat is 2 Syns per level tbsp, so you’d need to swap out the raisins and brandy, add the mincemeat and adjust your Syn values accordingly.

      They would keep in an airtight container in the fridge for up to 48hrs. We haven’t tried freezing them, but there’s no reason why they shouldn’t be frozen.

      Someone in the Facebook group switched the raisins and rum for sweet mincemeat and adjusted the syn values accordingly. If you’re really not keen on dried fruit, you could add the flesh of an orange, plus some orange zest and spices to give a festive flavour. Again, check the syns for whatever you choose to use.
