It comes as a surprise to some people that I’m not a great lover of soups. I generally find them bland and uninteresting.

The cost of buying fresh cartons of the stuff puts me off too, and I always find the tins to be a little artificial tasting.

However, there are a few soups that I just love, and Syn Free Carrot and Coriander Soup is one of them!

The combination of the sweet, earthy carrots with the fragrant coriander is perfect for any season but especially Autumn.

The colour is enough to make anyone forget the darker evenings and the cooler temperature!

How many Syns in this Syn Free Carrot and Coriander Soup?

As the title suggests, this Syn Free Carrot and Coriander Soup is…syn free and also gluten free, dairy free and vegetarian!

All soups needs a good garnish and on top of this Syn Free Carrot and Coriander soup is some crispy match sticks of carrot.

This really adds some texture and makes the soup look so fancy, without much effort at all! I used my amazing Deiss peeler (aka match stick slicer!) to make these.

An airfryer is a must-have gadget when following the Slimming World plan. I use this Breville VDF105 Halo Plus Health Fryer – White/Green to cook these carrot match sticks.

This air fryer is also great for making these Syn Free Salt and Pepper Chips

How do I make this Syn Free Carrot and Coriander Soup?

Step 1

Chop 5 of the carrots and add to a saucepan with the onion and potato. Cover with the boiling water, add in the stock pot and simmer.

Step 2

Crush the coriander seeds in a heavy pestle and mortar – you can use ground coriander but there tends to be more flavour in the whole seeds. Add to the saucepan.

Step 3

Meanwhile, julienne the remaining carrot into thin match sticks. Add to the air fryer and spray with frylight and a pinch of salt flakes. Cook until crispy.

Step 4

Chop the fresh coriander. Add the chopped stalks and half of the leave into the saucepan and simmer until the carrot and potato is tender.

Step 5

Blitz the soup using the hand blender until smooth. If it is too thick, add some extra stock or boiling water.

Add the remaining fresh coriander leave and whizz for a couple of seconds. Serve while hot, topped with the crispy carrot matchsticks!

INGREDIENTS

INSTRUCTIONS

  4. Chop the fresh coriander. Add the chopped stalks and half of the leave into the saucepan and simmer for a further 10 minutes until the carrot and potato is tender.
  5. Blitz the soup with the hand blender until smooth. If it is too thick, add some extra stock or boiling water. Add the remaining fresh coriander leave and whizz for a couple of seconds.
  6. Serve while hot, topped with the carrot match sticks and a sprinkle of fresh coriander.

RECIPE NOTES

This recipe can be frozen, but please remember to do the following;

- Freeze it as soon as it is cold enough

- Use a container or bag that is suitable for freezing.

- Defrost thoroughly before reheating (you can use the defrost setting on your microwave.)

- Make sure it is piping hot all the way through before serving.

      The fresh coriander will give the best flavour, and also adds to the texture of the soup. You could use dried coriander, but you’d need to adjust the amounts to suit your taste.

      We’ve found the Breville Halo Plus Health Frier to be a great appliance. It’s personal preference, but we certainly like this one!
