This Hunters Chicken is perfect if you’re following a calorie controlled diet, and fits well with any one of the major diet plans such as Weight Watchers.

As a guide, an average man needs around 2,500kcal (10,500kJ) a day to maintain a healthy body weight. For an average woman, that figure is around 2,000kcal (8,400kJ) a day. How to make Hunters Chicken

There are many ways you can make this Hunters Chicken, and we’ve included a couple of them below in the recipe card.

Our favourite way of making this recipe is in the slow cooker!

This Hunters Chicken recipe only takes 3 hours or so on a high setting, but if you want to leave it on all day you should cook it on low or the chicken may dry out a little.

Hunters Chicken | Slimming & Weight Watchers Friendly

It’s incredibly easy to make. Here’s a summary;

  • Wrap the chicken breasts in bacon, and secure with a cock tail stick.
  • Put everything else in the slow cooker, with the chicken breast on top.
  • Cook in the slow cooker, then blitz the sauce, pour over the cooked chicken, sprinkle with the cheese and melt under the grill.
  • Serve with whatever you like. You’ll find some ideas below.

Any of the following go really well with Hunters Chicken. It’s one of those dishes that goes with pretty much anything. 

Whatever accompaniment you choose, don’t forget to account for the extra calories and/or other nutritional values.

The Slow Cooker

Slow cookers are great if you just want to throw everything in and have your dinner ready when you walk through the door.

The Stick Blender

We use a stick blender like this to make the BBQ sauce Tower Hand Blender, because they are so easy to use and (just as importantly) so easy to clean.

Cocktail Sticks

If you’re anything like us you’ll always have a pack of cocktails sticks lurking at the back of the cupboard, usually leftover from Christmas.

But if not you can pick some up from any supermarket or from Amazon.

Can you cook this Hunters Chicken any other way?

As mentioned above there are a couple of ways to cook this Hunters Chicken.

Slow Cooker: This will take around 3 hours or so – see the instructions in the recipe card below.

Oven: You can also cook this in the oven in a casserole dish. Cook for about an hour  at 180°C. 

How do you know when Hunters Chicken is cooked?

As with all chicken dishes, it will be cooked when the juices run clear after pricking the chicken with a fork. 

This should take approx 1 hour in the oven, and 3 hours in the slow cooker.

Standard advice here in the UK is to cook food until it has reached 70°C and stayed at that temperature for 2 minutes. This is to keep your family safe. 

How long can you keep Hunters Chicken in the fridge?

Once you’ve put it out, ideally you should eat it within 4 hours.

If you allow any left overs to cool, make sure to refrigerate them straight away, in a container with a lid.  You can keep leftovers of Hunters Chicken in the fridge for approximately 2 or 3 days. 

Can I freeze Hunters Chicken?

Yes you can! This recipe can be frozen, but please remember to do the following;

  • Freeze it as soon as it is cold enough.
  • Use a container or bag that is suitable for freezing.

Don’t forget to add a label with what it is, and on what date you put it in the freezer! Unless you fancy mystery food for dinner haha.

How do I reheat Hunters Chicken?

From chilled: Place in a microwave proof container with loosely fitting lid and heat for 4-7 minutes until piping hot.

From frozen: Allow to defrost, and heat covered in the microwave for 3-5 minutes then stir. Cook for a further 5-7 minutes until piping hot.

INSTRUCTIONS
Slow Cooker Method
  1. Take each chicken breast, wrap a bacon medallion around the middle and secure it with a cocktail stick
  2. Set the chickens aside, then add all of the remaining ingredients into the slow cooker and stir well
  3. Place the chicken on top and replace the lid. Cook on high for 2.5 - 3 hours (or low if you're leaving it on all day)
  4. When the time is up check that the chicken is cooked. Remove it from the slow cooker and set aside
  5. Blitz the sauce with a stick blender until smooth
  6. Place the cooked chicken in an ovenproof dish and remove the cocktail sticks
  7. Pour the sauce over the chicken breasts and top with cheese. Divide the cheese equally between all for chicken breasts
  8. Place under a hot grill until the cheese is melted and a nice golden colour
Oven Method

  6. Place the cooked chicken in an ovenproof dish and remove the cocktail sticks
  7. Pour the sauce over the chicken breasts and top with cheese. Divide the cheese equally between all for chicken breasts
  8. Place under a hot grill until the cheese is melted and a nice golden colour

This recipe can be frozen, but please remember to do the following;

- Freeze it as soon as it is cold enough.
- Use a container or bag that is suitable for freezing.
- Defrost thoroughly before reheating (you can use the defrost setting on your microwave.)
- Make sure it is piping hot all the way through before serving.

If making this recipe Gluten Free please make sure to check the ingredients that you’re using

Especially things such as; 

- Stock cubes
- Soy sauce - substitute with Tamari.
- Worcestershire sauce - substitute with Henderson’s Relish.
- Etc.

    1. Hi – Can I confirm if it is 170 or 180 on fan please?
      Underneath the recipe it says “We use a fan assisted oven for all of our recipes”.
      The recipe states 180 so I am a tad confused and wanted to make sure.

      1. The vinegar adds some acidity, so you would want to replace it will something like lemon juice and a pinch of sweetener if you can. The Franks sauce could be substituted for Tabasco, sriracha or a pinch of chilli powder 🙂

  4. Has the method for this changed? I’ve done this a few times before (but not for a while) and I’m sure I did the sauce on the hob first and I know I didn’t blend anything.
    About to do it now and it’s confused me.

    Is there anything I can do to adjust to make it more family friendly but still healthy?

  12. Great recipe! Just made this in oven with chicken fillets and normal bacon (fat removed) so didn’t wrap them, just laid pieces on top of the sauce. Word of warning re blitzing sauce – be careful if your dish isn’t that deep or you will peddledash yourself & the kitchen! Served with mini SW roasties & carrots. 😋

I want to cook this later today but just realised i haven’t got any of the franks buffalo wings hot sauce, would it be okay to use hot & smoky chipotle chilli sauce or I have Schwartz crushed chillies or cayenne pepper.? If these are ok as an alternative to franks sauce, how much should I use?

  23. Chicken came out of the oven really chewy 🙁 I did exactly as it said. Do you think 1hr was too long if it was chewy? Sauce was delicious. I will be trying again if I can get the chicken right, any suggestions?

  24. Found this more of a tomato sauce with a hint of spicey bbq. Maybe only use tinned tomatos and more bbq powder ?
