These slimming friendly Double Sausage Fakeaway McMuffins are the ultimate treat for breakfast.

If you’ve ever enjoyed a sausage McMuffin, you’ll know that the sausage patties are very distinctive in taste. Herby, but not spicy like Cumberland. To get that tasty McMuffin flavour, we’ve used some low-fat sausages with some extra herbs – but be sure to check the nutritional values of whatever sausages you use as they do vary.

These are really quick to make, but remember that if you microwave the egg you MUST prick the yolks. Otherwise you’ll be cleaning egg up, which trust us is no fun! If you have a bit more time, you could also poach them.

Step 1

Remove the skins from the sausage and place the sausage meat in a bowl.

Step 2

Add the chopped herbs, you can use a small pinch of dried if you don’t have fresh.

Split the sausage meat into 4 equal pieces, then shape each one into a flat round burger shape, big enough to fit on the roll.

Step 4

Fry each sausage patty over a medium heat, in a little, low calorie cooking spray until they are cooked through. It should take around 5 minutes on each side.

Step 5

When the sausage is almost cooked spray two small microwaveable bowls with low calorie cooking spray and crack an egg into each one. Season the eggs, pierce the yolks and cover with cling film.

Step 6

Microwave each egg on high for about 30 seconds. Keep an eye on them as they may pop in the microwave. The yolks should be quite firm but still moist.

Step 7

Slice the rolls in half, then stack two sausage patties on each roll, add the Primula on top of the sausage and then top with the egg.

  • 6 low fat sausages
  • 1 leaf fresh rosemary chopped
  • 1 sprig fresh thyme chopped
  • 1 leaf fresh sage chopped
  • 2 wholemeal rolls approximately 60g each
  • 2 tbsp light cheese spread
  • low calorie cooking spray
  • 2 eggs

    Hi Ana, sorry you’ve had trouble with this recipe. Try running your hands in cold water to make them cool when handling the sausages this way the mixture shouldn’t become too sticky when making into the patties. It could also be down to the brand of low fat sausages you are using that is making the mixture difficult to bind together like you said you can use an extra egg or try some breadcrumbs, this will alter the calories but have a look at our guide HERE on how to alter them for any changes you make.
